Thank you very much for having updated your report about an interesting and obviously still unsolved BIOS modding problem with your Lenovo ThinkPad X1 Carbon Gen 3.
Since I found within the Forum at least 2 different threads about the same problem, I have merged their contents to make it easier for other users to find the solution (whenever the problem will be solved).

As you can see within this meanwhile updated and merged thread, your problem to get full NVMe support with a Lenovo ThinkPad X1 Carbon Gen 3 hasn’t been solved until now.
