[Help] modding Supermicro X9DRi-LN4F+

Hello, sorry for my bad English and my low knowledge on modding bios (I’m trying to study )…I would try to mod a Supermicro X9DRi-LN4F+ bios…I downloaded and started UBU 1.76.2.2 and this is the first screen:

I’ve download also Intel RST package…but I don’t know which ROM I should use (what are the differences?) for updating disk controller: RST, RSTe or VROC? and also can I use the more recent version or a specific version?
same for Network…should I use the more recent suggested module available on UBU?

Also, I want to enable NVMe full support (like guide in this forum)…but should I do this after using UBU (I think) or before?
Last request…I would like to use ES (engineering sample) cpu on this motherboard…but seems that Supermicro blocks this kind of cpu (reading on Web, but I’m not sure…and I have not buy es cpu yet to test)…is there a way to bypass this block?
