So I have an AMD 3950x with a MSI x570 ACE motherboard, currently running my OS on a single Samsung 960 evo 500GB M.2 NVMe.
I picked up 2x 1TB 980 evo and would like to move my OS to the new drives and run it in RAID0 for some extreme performance. (yes I’m aware of the risks of RAID0)
I’ve successfully installed the AMD-RAID drivers during a fresh Windows install, and everything works great. But instead of starting from scratch, ideally I’d like to clone my 500GB drive to the new 2TB array.
I’ve used Macrium Reflect for this before, but not from a non-RAID to RAID. The 2x 1TB drives show up as individual 1TB drives in Macrium, not one 2TB drive.
Is what I’m trying to do even possible?
I presume if I create a backup image from the non-RAID OS, and then restore it to my new RAID OS, it will overwrite everything and remove the AMD-RAID drivers…
I’m currently dual booting back and forth to try different things. So while I fiddle with it I figured I could ask here 
I can’t be the first person trying to do this, right?

It clear from what you said, that Macrolum Reflect do not have your raid driver. but most of Disk Imaging softwares has an option to accept raid controller drivers, it may needs Windows driver or Linux driver. You had to download it on a flash disk and introduce it to the Macrulum Reflect.
The other posible problem is: even if you copy your Windows’ image successfully, you computer may not boot. To prevent such problem, I always force install the raid controller`s driver on my Windows when it is bootable i.e. it is on single drive, when I want to copy Windows’ image.
It is generally not a good idea to clone the content of a single system drive into a RAID Array.
You have not only to customize the in-use storage driver, but the small boot partition as well.
According to my own experiences it is much safer and at least less time consuming to take the opportunity to do a fresh OS installation onto a freshly created RAID0 partition.

I confirm that it is time consuming cause of writing/creating disk`s image may takes hours to complete in some configurations; especially when you need to repeat it in try and error semantic.
but fresh installation need to transfers all Apps with their configurations and all tweaks and customizations you have done here and there, and something will be missed.

Personal customizations of certain Apps should anyway be documented somewhere outside (to be able to recover them in case of a bricked device).
By the way: The user benefits more than you may think from a freshly done OS installation. You will be surprised by the performance of a garbage freed system.
