Ryzen 5 1600x, temps, spikes and cooling

Heya,
I am new to AMD and temperature spikes looks bad for me.

I buy good cooler on paper:
Thermaltake "Riing Silent 12 Pro" Red, was really hard to install, screwdriver need to be more, than 150mm long and I buy 300mm and things go well. And I think, that put too much thermal grease. I see spikes in temperature and easy go from 34 to 55-60 for secs. If I clean thermal grease and put less will I remove this spikes?

Also I see x-versions /1600x/ that are with 20C more in monitoring, so I stress CPU with Prime95 for 2 hours and get 74.35C /RyzenMaster utility/ are this temp actually is 54.35C?
